Triple Berry Crisp

OVEN 350

1 1/2 cup blueberries
1 1/2 cup raspberries
1 1/2 cup blackberries
4 Tbsp. white sugar
2 cups flour
2 cups rolled oats
1 1/2 cup brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 cup butter

Preheat oven to 350. In a large bowl, mix all berries and sugar together. Set aside. In a second bowl combine oats, brown sugar, cinnamon, and nutmeg. Cut in butter until crumbly. Press half of the mixture into the bottom of a buttered 9x13 pan. Cover with berries. Sprinkle remaining crumble mixture on top of the berries. Bake for 30-40 minutes, or until fruit is bubbly and topping is golden brown. Serves well with ice cream.

Asparagus and Potato with Mint and Almonds

Preheat oven to 400

24 small red potatoes
3 Tbsp. olive oil for coating
1/4 cup olive oil
salt and pepper
2 lbs. asparagus
1 cup chicken stock
2 cloves mined garlic
1/2 cup toasted almond slivers
1/2 cup chopped fresh mint or basil

Plsce potatoes in a baking pan and coat with 2 Tbsp. oil. sprinkle with salt and pepper. Roast potatoes until cooked through but firm (about 25-35 minutes). Remove and let sit until cooled.

Meanwhile, prepare asparagus by snapping of the ends of each stalk. Bring about 2 inches of salted water to a boil in a fry pan. Lay asparagus in pan and cook until tender-crisp (about 3-5 minutes). Remove and plunge into ice water, then drain and pat dry. Cut into 2 inch lengths.

Cut potatoes into quarters. Warm 1/4 cup olive oil in a large saute pan. Add potatoes and heat them through. Add the asparagus, chicken stock, and garlic and simmer a few minutes. Season with salt and pepper. Add almonds and mint, then serve.

Chocolate Chocolate Chip Cookies

Preheat oven to 350

1 cup butter
1 1/2 cups sugar
2 eggs
2 tsp. vanilla
2 cups flour
2/3 cup cocoa powder
3/4 tsp. baking soda
1/4 tsp. salt
2 cups semisweet chocolate chips
1/2 cup nuts (optional)

Preheat oven. Mix together butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in chocolate chips. Place rounded teaspoons full on an ungreased cookies sheet. Bake 8-10 minutes.

Extraordinary Cranberry Sauce

1 cup water
1 cup sugar
1 (12 oz.) package fresh cranberries
1 orange
1 apples- peeled, cored, diced
1 pear- peeled, cored, diced
1 cuo chopped dried mixed fruit
1 cup chopped pecans
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground nutmeg

Place all ingredients in a crock-pot and cook for about6 hours- until cranberries burst and everything mixes together.

Chicken Stir-Fry

4 boneless chicken breasts
3 Tbsp. corn starch
2 Tbsp. soy sauce
1/2 tsp. ginger
1/4 tsp. garlic powder
3Tbsp. cooking oil-divided
bag of frozen stir-fry veggies or 3-5 cups of any veggies in your fridge.
1 cup chicken stock or water with a bouillon cube

Cut chicken into bite size pieces. Place pieces in a resealable bag. Add corn starch and toss to coat. Combine soy sauce, ginger, and garlic powder- add to bag ans shake well. Refrigerate for 30 minutes.

In a large skillet or wok, heat 2 Tbsp. oil. Stir-fry chicken until no longer pink (about 3-5 minutes). Remove chicken from pan and keep warm. Add remaining oil and veggies. Stir-fry for about 4-5 minutes. Add water with bouillon or chicken stock. Return chicken to the pan. Cook and stir until thickened and bubbly.

Frosting

1 cup shortening
1 tsp. vanilla
2 Tbsp. milk or water
1 lbs. powdered sugar
1 Tbsp. meringue powder (or a scant Tbsp. of flour)

Mix together. Add more or less liquid to change consistency.

Ham


Wonderfully good . I guarantee you will get compliments.

Crock-pot recipe

2 cups brown sugar
1 (8 lbs.) cured bone-in ham (though you could probably use bone out)

Spread 1 1/2 cups brown sugar in the bottom of slow cooker. Place ham on brown sugar flat side down. You may need to trim off a little to get it to fit. Use your hands to spread remaining 1/2 cup brown sugar on top part of ham. Cover and cook on low for 8 hours. Trust the time, it will look dark and almost burnt like. Do not add any liquid. Let the ham juices do their job.
