Blueberry Muffins
1 1/2 cup flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp salt
1 egg, lightly beaten
1/2 cup milk
1/4 cup oil
3/4 blueberries
Combine flour, sugar, baking powder, salt. Add milk, egg, and oil. Fold in blueberries. Bake at 400 for 20-25 minutes.
Popovers
1 1/2 Tbsp. melted butter
1 1/2 cups sifted flour
3/4 tsp. salt
3 extra large eggs at room temperature (add an egg for small eggs)
1 1/2 cups milk (fatty)
Grease pan with butter. Preheat the pan for 2 minutes in hot oven. Fill muffin pan 1/2 full. Bake 24-30 minutes (error on the low side). Use oven light to watch until golden brown.

Orange Muffins
PREHEAT 375
½ cup orange juice
2 cups flour
¼ cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ cup honey
2/3 cup melted butter
2 egg2
1 teaspoon vanilla extract
Combine flour, sugar, baking powder, and baking soda. In a separate bowl, combine honey, orange juice, butter, egg, and vanilla; mix well. Stir into dry ingredients. Grease muffin tin or use baking cups. Fill each cup 2/3 full with batter. Bake at 375 until golden, about 15-20 minutes. Makes 12 muffins.
Apple Muffins
PREHEAT 425
2 cup flour
½ cup sugar
4 tsp. baking powder
½ tsp. salt
Cinnamon
1 beaten egg
1 cup milk
4 Tbsp. melted butter
1 cup chopped apples
Sift flour, sugar, baking powder, salt, and ½ tsp. cinnamon. Add other dry ingredients, beat well. Fold in apples. Mix cinnamon and sugar to sprinkle over. Bake at 425 for 12-18 minutes. Makes 12 muffins.
