Sweet Carrots

Carrots- sliced on the diagonal
tablespoon of clarified butter

Saute carrots in butter on medium heat for about 5-8 minutes.

How to clarify butter:
On VERY low heat, melt real butter. Skim off fatty solids that rise to the top. Remove all solids. Keep the light yellow, clear liquid.

½ cup bread crumbs plus additional for topping

¼ cup butter (half a stick)

1/8 cup sugar

1 Tbsp. onion- diced

Salt and pepper to taste

Cut off tips of squash and cut each squash into 3-4 pieces. Drop into a large pot with enough boiling water to cover the squash. Return to a boil, reduce heat and cook until tender. Bake at 350 for 20-25 minutes or until lightly browned.

Bacon Wrapped Breen Beans

I can drained whole green beans

Bacon strips, cut in half

Wrap 5 green beans in each bacon half and secure with a toothpick. Place on a cookie sheet and bake at 350 for 45 minutes. Paper towel off excess grease when removing from cookie sheet to serving dish.

**You can also use fresh green beans, but I would recommend steaming them first. Otherwise, the beans are too hard after cooking and do not absorb as much flavor.
